Bánh Khoái Huế: Recipe of Crispy Fried Pancake in Hue

Bánh Khoái Huế (Vietnamese: Hue Fried Pancake): The ancient capital of Hue is always loved by tourists by its delicious and unique dishes. Among those dishes, there is one dish that any tourist coming to Hue wants to enjoy, which is Bánh Khoái Huế or Hue Friend Pancake - Bánh means Pancake; Khoái mean Delicious in local language. Bánh Khoái Huế

Bánh Khoái is a special fried pancake of Hue. The method is quite similar to Southern pancakes, but the shape of the cake is completely different. The cake has a round shape in the form of a pouring mold, the cake is made from the main ingredient that is rice flour, with a filling on it, the cake is usually served with raw vegetables and dipping sauce.

It is not too difficult to make a delicious cake, but how to make it delicious and crispy is what is important. To make the cake, the craftsman uses a small cast iron pan, with a flat bottom about 15cm in diameter, 2 to 3cm thick. The ingredients for making cakes include rice flour, shrimp, green beans, bean sprouts, etc. The crust is made of rice flour mixed with water, adding a little turmeric to color, seasoning with salt, and MSG to taste. form a smooth paste. The stage of making the dough is an extremely important step that determines the crispiness of the crust. The cake is delicious or not depends on this stage.

Hue Fried Pancake

Place the cast iron skillet on the stove until it is hot, coat the pan with a tablespoon of oil, then add a patch of batter to the pan. Then spread the filling evenly on the surface, usually Hue people use shrimp, egg yolk, bean sprouts, raw pork rolls ... to make the filling. After adding the filling, close the lid and wait for about 3 minutes for the cake to cook, add green onions, wait for the crust to turn yellow, and then bring it out.

Whether the cake is delicious or not depends on the sauce of the cake. Hue people make very sophisticated cake dipping sauce. The sauce is cooked from more than 10 spices, with special ingredients such as pork liver and pureed lean meat, along with spices such as onions, garlic, roasted sesame, peanuts, soy sauce, broth, and main noodles. The dipping sauce is simmered until it thickens and has a light yellow color.

When fried, the cake is fragrant, has a bright yellow color, the cake is often folded in half and placed on a pure white porcelain plate. Cake served with lettuce, herbs, figs, sweet star fruit. Recipe of How to Make Bánh Khoái Huế:

1. Ingredients to be prepared:

  •  300g dry rice flour
  • 100g fresh shrimp
  • 300g bean sprouts
  • 100g lean pork shoulder
  • 2 chicken eggs
  • Onion, garlic, chili
  • Seasoning: Salt, sugar, cooking oil, monosodium glutamate
  • 100g ham

2. How to make Hue standard cake simple and delicious:

Step 1: Prepare ingredients

• You put the rice flour through the filter, filter until the flour is smooth and then slowly add water. Next, season the flour with a little salt, monosodium glutamate and mix well until the dough is smooth.

• The pork you buy is washed, chopped, and then hand-washed into small balls like marbles.

• Fresh shrimp bought for you clean, cut off antennae, head, legs, but still have the shell. Then, put the shrimp in the pot to boil and remove to a separate plate.

• Onions you bring peeled, washed and sliced.

• You separate the eggs into a bowl and beat them.

Step 2: You put 2 tablespoons of cooking oil in a hot pan, then add 2 round meatballs to the island until cooked.

Step 3: When the meatballs are cooked, add 1 patch of flour, then spread the pan. Next, you add boiled shrimp, onions, and bean sprouts, then cover the lid and fry for about 5 minutes until the dough is cooked.

Step 4: Finally, you pour 2 tablespoons of egg evenly over the cake with 1 tablespoon of cooking oil and then fry until the egg surface is golden, then turn off the heat and put the cake on a plate. Note, when frying, you should spread a thin layer of dough and fry with low heat so that the dough is crispy, not burnt. Continue doing this until you run out of ingredients.

Step 5: Make the dipping sauce

Put the pan on the stove, when the pan is hot, add sesame oil so that the oil is hot, add chili sauce and stir-fry until the color changes. After 5 minutes, the mixture has boiled, then add the black sauce and sugar. Then add flour to the mixture and stir well, add crushed peanuts until the broth thickens, then turn off the heat. When the water is cold, it can be used, add crushed garlic chili according to taste.
