Nem Nướng Nha Trang: Vietnam Grilled Pork Rolls Recipe

Nem Nuong (Vietnamese Grill Pork) is a dish that everyone knows, but each region has a different perception of the dish. Each place has a unique flavor pattern, and the accompaniments will also be slightly different from North to Central and Southern Vietnam. In Northern Vietnam, people has Grill Nem Chua, Central Vietnam has Nem Lụi Huế and Nem Nướng Nha Trang. In Southern Vietnam, Nem Nuong is very different from that in the North but a bit like the Central region. The difference here is that there is more sweetness than in the Central. Another difference is that the sauce of Southern Nem Nuong will be made from sour tamarind juice and eaten with more raw vegetables.

On an occasion to travel to Nha Trang when there was no Covid-19, I was able to enjoy Nem Nướng Nha Trang (Grilled Pork Rolls) of this city. This is one of the specialties that many people know and love when they have the opportunity to visit Nha Trang.

At first glance, many people easily confuse Nha Trang's Grilled Porl Rolls with Hue's Grilled  Pork Rolls (Nem Lụi Huế) because they are also fragrantly grilled, also served with rice paper, herbs, and also use dipping sauce. However, these two dishes have different recipes, and the same way of eating. If spring rolls are often chosen to be made from fatty pork, Nha Trang grilled spring rolls are a combination of thigh meat and pork skin. If you look closely, then after baking, these two spring rolls look completely different.


Here's recipe of how to make Nem Nướng Nha Trang (Nha Trang Grilled Pork Rolls) in an oil-free cooking with a little variation according to your own preferences. At first, you need to prepaire Ingredients depending on your serve, this is for 2 people to eat:

  • Raw Pork Paste: 200 grams.
  • Ground lean meat: 400 grams.
  • Fat: 100 grams.
  • Tapioca powder: 2 tbsp.
  • Ricepaper; fresh lemongrass; minced garlic, chili, shallot; lemon.
  • Oyster oil, cashew oil, cooking oil, fish sauce, salt, pepper, sugar.

How to Making Nem Nuong?

- Wash pork fat, drain the water, then cut the dices.

- Put 400 grams of ground pork, 100 grams of just-cut fat and 200 grams of raw ham in a bowl.

- Marinated with spices including: 2 tablespoons tapioca starch (for easy adhesion), 1 teaspoon sugar, 2 teaspoons oyster sauce, 1 teaspoon delicious fish sauce, 2 teaspoons minced garlic, 2 teaspoon minced shallot, half teaspoon ground pepper, 3 teaspoons cashew oil.

- Mix everything together until it feels smooth and leave for an hour for the meat to absorb the spices.

- Fresh lemongrass cut about a hand, washed, smashed the head.

- Take the marinated meat mixture and wrap it around the top of the lemongrass plant.

- Put spring rolls in an oil-free fryer. Turn the grill to 180 degrees Celsius for 10 minutes, after 10 minutes, open the pot to check and flip the spring rolls for even and continue the water at 180 degrees Celsius for another 5 minutes to cook.

Making the Dipping Sauce:

Depending on the taste and preferences of family members, you can make the dipping sauce accordingly. The most pupolar dipping sauce is sweet and sour sauce, which really stimulates the taste buds. Put garlic, minced chili in a bowl, add 2 tablespoons of sugar, 1 tablespoon of lemon juice, 2 tablespoons of delicious fish sauce, 2 tablespoons of warm water. Then stir the mixture until smooth.

How to Serve Nem Nuong?

Similar to the way to cook food, enjoying Nha Trang grilled pork rolls is also very simple. Just lightly wet rice paper with a little water, then add raw vegetables, grilled spring rolls and crispy rice paper, sprinkle with a little sour food then roll. Finally, we have a delicious and attractive finished product.


Put the freshly made roll into a cup of special sauce, bring it to your mouth, you will immediately recognize the unique flavor that only when you come to Nha Trang, you can fully feel it. Take the first bite, you will see the salty, chewy taste of rice paper rolls and the irresistible crunch of fried rice paper. Accompanied by a little sourness of fresh star fruit, a little mango and a bit of acrid aftertaste of green banana. All blend together like a delicious mixture that creates the nostalgia of the dish.
