Bún Riêu Vietnam: Crab Noodle Soup Recipe & Ingredients
Bún Riêu Cua in Vietnam (Crab Noodle Soup) is one of the best popular dishes during summer days for Northern Vietnamese. The main ingredient of Bún Riêu is of course crab meat. Crab meat is rich in nutrients that help one lose weight, prevent cancer and that is also good for the heart and eyesight. The unique addition to this noodle soup is the “riêu” or meatballs, made of pork, shrimp, crab, and prawns.
Recipe of Real Authentic Bun Rieu is simple. First thing you need to do is selecting moderate size female crabs. The crabs will be washed and their aprons are removed. The crab roe is separated and sautéed with salt, onions and oil to become aromatic, rich and custardy.
The crab legs with body are mixed with salt and rinsed before being pounded. The substance is then filtered in water to remove big pieces of shell. The remaining solution collected will be cooked until it boils and the crab meat forms blocks floating on the surface of water. The crab meat is taken out and placed alongside the sautéed crab roe.
In order to enhance the flavor of Bún Riêu Cua, some people may add bone broth. To make the broth have a good eyes catching color, cooked fresh tomato sauce will be added. A little vinegar and garlic gives the broth a mild sour and spicy taste.
When the broth is done, the vermicelli or rice noodle is put into the bowl with the shiny yellow crab roe and chopped scallions on top. Bun Rieu in Vietnam is usually served with lemon, raw leafy vegetables such as lettuce, perilla, marjoram, and sliced banana flowers. With simple ingredients easily found in the countryside, Bun Rieu is a popular nutritious and healthy choice on hot summer days.
