- Ingredients for Hanoi Bun Cha (For 4 people):

  • Fresh vermicelli 1 kg
  • Bacon is only 700 gr
  • Minced pork 500 gr
  • 1 fresh carrot
  • Enough green enough 1/2 left
  • Raw vegetables of all kinds 500 gr (lettuce/perilla/basil/basil/lettuce)
  • Minced red onion 1 tbsp
  • Minced garlic 1.5 tbsp
  • 1 little minced chili
  • Oyster oil 2 tablespoons
  • Honey 3 tbsp
  • Colored water 2 tablespoons
  • Fish sauce 1 cup (about 220ml)
  • Vinegar 1/2 cup (about 100ml)
  • Cooking oil 1 little Common seasoning 1 little (salt / sugar / ground pepper / seasoning / monosodium glutamate)

- How to cook Hanoi Bun Cha

  • Step 1: Prep and marinate meat

For bacon, to remove dirt and odors, you should scrub it with salt, then rinse with cold water and dry. Use a knife to cut the meat into bite-sized pieces.

Marinate the meat with 1/2 tbsp minced shallot, 1/2 tbsp minced garlic, 1/2 tbsp seasoning, 1/2 tbsp MSG, 1/2 tbsp ground pepper, 2 tbsp fish sauce, 1 tbsp oyster sauce, 2 tbsp honey, 1 tbsp colored water, then mix well and let the meat soak for at least 30 minutes.

As for the ground meat, you put 1/2 tablespoon minced shallot and 1/2 tablespoon minced garlic, 1/2 tablespoon seasoning, 1/2 tablespoon MSG, 1/2 tablespoon ground pepper, 1.5 tbsp fish sauce, 1 tbsp oyster sauce, 1 tbsp honey, 1 tbsp colored water. Mix well with your hands and marinate the meat for about 30 minutes to infuse the flavors.

After about 30 minutes, use your hands to take a sufficient amount of ground meat and then roll it into balls.

  • Step 2: Prepare other ingredients

To remove plastic and dirt, carrots, papayas when you buy them, peel them, then soak them in diluted salt water for about 5-10 minutes, then rinse them with water and then drain.

Proceed to prune the flowers for the carrots, then cut the carrots and papaya into thin slices and put them in a bowl. Add 1/3 tablespoon of salt to the bowl and mix well, marinate for about 15 minutes, then rinse the carrots and papaya with water.

Add 1.5 tbsp sugar, 1/4 tbsp salt, 1 tbsp vinegar, 1/2 tbsp minced garlic, mix well and marinate for another 15 minutes.

  • Step 3: Cooking meat

Use a brush to spread a thin layer of cooking oil on the electric grill, arrange pork belly and meatballs on top. Grill the meat until golden brown on both sides, then fold into a bowl.

  • Step 4: Cooking fish sauce

Put the pot on the stove, add 1 cup of fish sauce (about 200ml), 1 cup of sugar (about 200gr), 1/2 cup of vinegar (about 100ml) and 2 cups of filtered water and cook on high heat for When the seasoning is completely dissolved and the fish sauce starts to boil, turn off the heat.   • Step 5: Finished product
